Rhubarb

What a treat for February… I have been enjoying sweet rhubarb that melts in the mouth.  In January I covered one plant and have harvested two small portions from it once  the stems reached up to the heavens in search for light.  I have uncovered the plant on an overcast day so as not to scorch the tender shoots and now it can begin its season of photosynthesis, I will not pick from this plant again this summer.
